Macaroons for Cookie Swap


I had so much fun being a Cookie Santa this year! I wish I had been able to put forth more effort in developing a unique recipe… but I wasn’t able to.  But, I did make these very yummy macaroons!  The recipe is one which I have baked many times before and is a favorite of our family’s.  Coconut Macaroons

I really enjoyed all the yummy cookies I received! Thanks to Chocolate and Carrots for the decadent truffles, Balicravings for the Caramel Almond cookies, and Cupcakes and Bakes for the Iced Oatmeal Cookies.  They were all so delicious and devoured by myself and my family.

Apples! Apples!


10 Granny Smith Apples

1 pkg of round dowel sticks  (cut them in half)

2 bags of wrapped caramels

4tbsp milk

one Butterfinger candy bar (crush in food processor)

pkg of chocolate jimmies

pretzel rods or any kind of pretzels (crush several in food processor)

wax paper


Prepare apples by boiling a pot of hot water.  Place one apple in water for one second.  Take apple out and wipe it with a towel to remove wax.  Repeat process for each apple.  Place apples in freezer for about 30 minutes to cool them down.  This will enable the caramel to firm up on the apples faster and prevent a lot of dripping.  After apples have chilled, poke your cut dowel segments into each apple.  Line a pan with wax paper for apples to sit on.

Unwrap caramels and stir in 4tbsp milk, in a pot over medium heat. After caramel is completely melted, take off heat and allow it to seat a couple minutes to thicken up just a bit.   Then, dip apples one at a time into caramel, using a spoon to ladle caramel over the top if needed.  Allow excess caramel to drip off apple before dipping into a topping, then dip into a topping.  After dipping apple into topping, place the apple on your wax covered pan.


Homemade Caramel Sauce


I can’t believe it has taken me this long to try homemade caramel sauce.  It was so easy to make and it tastes 19 times better!  You can taste the cream and caramel goodness so much better than the kind you buy in the jar from the store.  Big bonus: no preservatives or yucky stuff in it!

Want to take some of these to work or school tomorrow?  Here’s a great tip.  Cut your apple with an apple corer but don’t cut it all the way to the bottom.  Keep your apple pieced together and wrap it in plastic wrap.  It will stay pretty fresh until you are ready to dip it in your caramel!
